Is there really anything better than the blend of beef, beans, rice, and cheese, swaddled in the loving embrace of a warm flour tortilla? I think not. That is why, ‘what are we making Monday’ is the homemade version of Taco Bell’s Beefy Melty Burrito.
Fun fact about me, my very first job, when I was 15, was working at Taco Bell! I have had my fair share of fast food, and it’s delicious, I won’t lie! However, I never eat fast food, now, but that doesn’t mean I can’t make a healthier version in my own kitchen! Using real ingredients! I make my own taco seasonings and queso sauce, but feel free to use the store-bought versions for an even quicker weeknight meal. This is a hearty, full of flavor, sure to satisfy any Mexican food craving!
Taco Bell’s Beefy Melty Burrito
Ingredients
- Burrito sized flour tortillas
- 1 pound ground beef, turkey or chicken
- 1 packet taco seasoning or homemade seasoning mix of chili powder, onion and garlic powders, cumin, paprika, oregano, salt and pepper
- 1 Cup Rice
- 1/2 Cup Salsa
- 1 can refried beans
- 1 jar queso (I make my own with a blend of cheeses, salsa, sour cream, and habanero hot sauce)
- shredded cheese cheddar, Colby, Monterey, or Mexican blend
- sour cream
- crushed tortilla chips
Instructions
- Cook meat in skillet until no longer pink. Add in taco seasoning and let simmer about 10 minutes.
- While meat is cooking, prepare rice according to package directions
- Also make, or heat up Queso dip
- Heat refried beans in a small saucepan
- When rice is done, add 1/4 cup shredded cheese and 1/2 cup of salsa. stir well
- When everything is cooked and heated through, warm tortillas in microwave for 20-30 seconds
- spread a layer of beans on the tortilla, then add a couple of spoonfuls each of the meat, rice, and queso, add a dollop (or 2) of sour cream and finish with crumbled tortilla chips or fritos.
- Fold ends of tortilla in and roll into a burrito.
- Serve alone or with a side of extra rice, beans, or queso and chips!
