Oh my goodness! This Italian sausage soup is soooooo good! Of course, it had to make it onto my what are we making Monday list. Oh my God, the flavor….The Flavor in this soup is amazing!! Everything blends so well, you just want more and more….and more!
Parmesan Italian Soup
Ingredients
- 1 tbsp olive oil
- 1 small onion chopped
- 2 cloves garlic minced
- 1 lb Italian sausage (you can use mild or hot) without casings
- 15 oz diced tomatoes, fresh or canned (drained)
- 4 cups chicken broth
- 1 cup heavy cream 1/2 C sour cream worked well
- 1 cup ditalini or elbow noodles
- 1 cup shredded parmesan cheese
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- black pepper, or red pepper flakes if needed
- fresh parsley, chopped for garnish
Instructions
- Cook Italian sausage in pot until browned and cooked through. Remove and set aside. Add oil and saute onion and garlic until softened.
- Add tomatoes, broth, basil and oregano and bring to a boil
- stir in dry pasta and cook 8-10 minutes
- lower heat and add cream and parmesan. Stir until creamy
- Return sausage to pot and season with pepper if needed (add red pepper flakes for a little heat)
- Serve with chopped parsley
