Parmesan Italian Soup

Ingredients

olive oil

onion
chopped

garlic

Italian sausage (you can use mild or hot)
without casings

diced tomatoes, fresh or canned (drained)

chicken broth

cup
heavy cream
1/2 C sour cream worked well
1
cup
ditalini or elbow noodles
1
cup
shredded parmesan cheese
1/2
tsp
dried basil
1/2
tsp
dried oregano
black pepper, or red pepper flakes if needed
fresh parsley, chopped for garnish
Instructions
Cook Italian sausage in pot until browned and cooked through. Remove and set aside. Add oil and saute onion and garlic until softened.
Add tomatoes, broth, basil and oregano and bring to a boil
stir in dry pasta and cook 8-10 minutes
lower heat and add cream and parmesan. Stir until creamy
Return sausage to pot and season with pepper if needed (add red pepper flakes for a little heat)
Serve with chopped parsley
