Parmesan Italian Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 lb Italian sausage (you can use mild or hot) without casings
  • 15 oz diced tomatoes, fresh or canned (drained)
  • 4 cups chicken broth
  • 1 cup heavy cream 1/2 C sour cream worked well
  • 1 cup ditalini or elbow noodles
  • 1 cup shredded parmesan cheese
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • black pepper, or red pepper flakes if needed
  • fresh parsley, chopped for garnish

Instructions
 

  • Cook Italian sausage in pot until browned and cooked through. Remove and set aside. Add oil and saute onion and garlic until softened.
  • Add tomatoes, broth, basil and oregano and bring to a boil
  • stir in dry pasta and cook 8-10 minutes
  • lower heat and add cream and parmesan. Stir until creamy
  • Return sausage to pot and season with pepper if needed (add red pepper flakes for a little heat)
  • Serve with chopped parsley
