What are we making Monday? If you love an Italian flare, you will love this Italian Pasta Salad. The tangy dressing and pepperoncini peppers, chock full of nutritious and delicious vegetables and the classic Italian taste of pepperoni and salami. This is sure to be a hit for your next meal, next get together or pot luck.
Italian Pasta Salad
Ingredients
- 1/2 box/bag your favorite noodles, I like spiral for this
- 1 can olives
- 4 oz salami cut in bite sized slices
- 4 oz pepperoni cut in bite sized slices
- 1 Cup cherry tomatoes halved
- 1 green bell bepper chopped
- 1/2 red onion chopped
- 1/4 Cup pepperoncini chopped
- Italian or balsamic vinaigrette dressing measure to your hearts desire
- Black Pepper according to taste
- 1/2 Cup Parmesan cheese shredded
- 1 TBlsp olive oil
Instructions
- Cook noodles according to package, al dente and rinse under cold water to stop them from cooking
- Chop and slice meats and veggies
- add all items to large bowl
- Add in 1 Tablespoon of olive oil and mix well, this will help keep it from drying out and soaking up all the dressing
- Add in dressing, pepper and parmesan cheese and mix well
- You can serve immediately or allow to chill until ready to serve
