What are we making Monday? Homemade Zucchini Crust Pizza! Yum!
Zucchini, zucchini, zucchini….what to do with all of this zucchini. Are you tired of zucchini recipes yet? I hope not, because I love it! And right now, that is the staple of my kitchen. My plant is insane. It’s the gift that keeps on giving. There is something rewarding in creating meals with ingredients you have grown yourself.
So this week we are making Zucchini Crust Pizza. Feel free to create this in any way you want. Use your favorite toppings to bring this all together. Instead of the traditional pizza toppings, I went with ranch for the sauce, topped with chicken, mushrooms, garden fresh tomatoes, spinach, bacon crumbles and mozzarella cheese and fresh picked Basil. It was everything I was hoping for. I hope you enjoy! Share with me your creations!
Homemade Zucchini Crust Pizza
Ingredients
- 2-1/2 Cups Zucchini shredded, drained, and squeezed dry
- 2 eggs lightly beaten
- 1/4 Cup flour
- 1/2 tsp salt
- 1/4 Cup grated Parmesan cheese
- 1/2 Cup Shredded Mozzarella cheese
- 1 tsp oregano
- fresh chopped basil
- add whatever toppings you would like; pizza sauce, garlic cream sauce, pesto, or ranch, pepperoni, sausage, salami, onions, bell pepper, mushrooms, olives, chicken, bacon, spinach, mushrooms, ham, pineapple etc
Instructions
- Preheat oven to 450 degrees
- Mix together the eggs, zucchini, flour, and salt. Add in Parmesan and mozzarella and combine
- Spread crust into a 10 inch circle (or square) onto baking sheet or pizza dish
- Bake for 15-20 minutes until crust is golden brown and set
- Remove crust from oven and reduce heat to 400. Layer on sauce and toppings of your choice. Sprinkle with Oregano and bake another 10-15 minutes. Garnish with fresh basil
