2-1/2CupsZucchinishredded, drained, and squeezed dry
2 eggslightly beaten
1/4Cup flour
1/2tspsalt
1/4Cup grated Parmesan cheese
1/2CupShredded Mozzarella cheese
1tsporegano
fresh chopped basil
add whatever toppings you would like; pizza sauce, garlic cream sauce, pesto, or ranch, pepperoni, sausage, salami, onions, bell pepper, mushrooms, olives, chicken, bacon, spinach, mushrooms, ham, pineapple etc
Instructions
Preheat oven to 450 degrees
Mix together the eggs, zucchini, flour, and salt. Add in Parmesan and mozzarella and combine
Spread crust into a 10 inch circle (or square) onto baking sheet or pizza dish
Bake for 15-20 minutes until crust is golden brown and set
Remove crust from oven and reduce heat to 400. Layer on sauce and toppings of your choice. Sprinkle with Oregano and bake another 10-15 minutes. Garnish with fresh basil
Notes
Making sure the zucchini is dry is key. The wetter the zucchini the soggier the crust.
