Homemade Zucchini Crust Pizza

Ingredients
  

  • 2-1/2 Cups Zucchini shredded, drained, and squeezed dry
  • 2 eggs lightly beaten
  • 1/4 Cup flour
  • 1/2 tsp salt
  • 1/4 Cup grated Parmesan cheese
  • 1/2 Cup Shredded Mozzarella cheese
  • 1 tsp oregano
  • fresh chopped basil
  • add whatever toppings you would like; pizza sauce, garlic cream sauce, pesto, or ranch, pepperoni, sausage, salami, onions, bell pepper, mushrooms, olives, chicken, bacon, spinach, mushrooms, ham, pineapple etc

Instructions
 

  • Preheat oven to 450 degrees
  • Mix together the eggs, zucchini, flour, and salt. Add in Parmesan and mozzarella and combine
  • Spread crust into a 10 inch circle (or square) onto baking sheet or pizza dish
  • Bake for 15-20 minutes until crust is golden brown and set
  • Remove crust from oven and reduce heat to 400. Layer on sauce and toppings of your choice. Sprinkle with Oregano and bake another 10-15 minutes. Garnish with fresh basil

Notes

Making sure the zucchini is dry is key. The wetter the zucchini the soggier the crust.
