What are we making Monday? Ham and Potato Soup. This soup is comforting and delicious! Ham, corn and potato together, is just one of those favorite blends of flavors combined.
This is especially great after the holidays, if you have leftover ham to use.
Ham and Potato Soup
Ingredients
- 1-3/4 Cup Water
- 2 Cups broth of choice vegetable, chicken, or bone
- 2 Cups cubed ham fully cooked
- 2-3 Cups cubed potatoes about 2-3 potatoes
- 1/2 Cup chopped or shredded carrots
- 1/2 Cup frozen peas
- 1 can corn, drained can also use frozen, about 1-2 Cups
- 2 cloves garlic, minced
- 3/4 tsp garlic salt
- 1/2 tsp black pepper more to taste
- 1 Cup shredded cheddar cheese
- 1/2 cup sour cream
Instructions
- In a large pot, bring water, broth, potatoes, carrots, and garlic to a boil
- Stir in garlic salt and pepper
- Reduce heat and cover. Simmer for 8-10 minutes until potatoes and carrots are tender.
- Add the ham and corn and peas. Stir well and simmer 5 minutes.
- Add in cheese and sour cream. Stir and allow to heat through before you serve.
