Ham and Potato Soup

Ingredients
  

  • 1-3/4 Cup Water
  • 2 Cups broth of choice vegetable, chicken, or bone
  • 2 Cups cubed ham fully cooked
  • 2-3 Cups cubed potatoes about 2-3 potatoes
  • 1/2 Cup chopped or shredded carrots
  • 1/2 Cup frozen peas
  • 1 can corn, drained can also use frozen, about 1-2 Cups
  • 2 cloves garlic, minced
  • 3/4 tsp garlic salt
  • 1/2 tsp black pepper more to taste
  • 1 Cup shredded cheddar cheese
  • 1/2 cup sour cream

Instructions
 

  • In a large pot, bring water, broth, potatoes, carrots, and garlic to a boil
  • Stir in garlic salt and pepper
  • Reduce heat and cover. Simmer for 8-10 minutes until potatoes and carrots are tender.
  • Add the ham and corn and peas. Stir well and simmer 5 minutes.
  • Add in cheese and sour cream. Stir and allow to heat through before you serve.
