What are we making Monday? This week I’ve chosen Crab Pasta Salad. I don’t even know why I love this so much, but I can’t stop eating it! It’s a wonderful twist on a classic macaroni or pasta salad.
Great for potlucks, company, or a delicious family meal. I remember as a kid they had imitation crab available at the salad bar at Pizza Hut. I loved that stuff! So not only is this delicious, it’s also a bit nostalgic for me.
Crab Pasta Salad
Ingredients
- 8 oz pasta of choice; penne, shell, spiral, macaroni use full bag if feeding a large crew
- 14 oz imitation crab meat
- 1/2 Cup frozen peas
- 1/2 Cup diced red onion
- 1/2 Cup chopped celery
- 1/2 Cup chopped red bell pepper
- 3/4 Cup mayonnaise
- 1 TBSP fresh dill or 1 tsp dried dill
- Salt and Pepper to taste
- Fresh chives, chopped for garnish
Instructions
- Boil water in large pot and add pasta. Cook according to directions. Drain Pasta and run under cold water
- In a large bowl, combine all ingredients and stir until everything is well coated. Add salt an pepper to taste
- Let chill in fridge for at least an hour before serving
- Top with fresh chives, parsley, and/or dill before serving
