What are we making Monday? Well, it is officially fall, so what better way to kick off a new season than Chicken Detox Soup! When you think of fall, you think cozy, warming, comforting, healing and transitioning. This soup is so amazing it’s hard to imagine that it is so good for you! It’s a great way to give your body a reset. It has several detoxifying ingredients to help flush toxins from your body and boost your metabolism. It is meant to be eaten breakfast, lunch and dinner for several days for a full cleanse and to get your body back on track, but you can also receive great benefits by eating for dinner and/or lunch for 2 or 3 days.
For me, when I hear the word detox, I think of pain, being uncomfortable, choking down horrible tasting crap, in hopes that it makes me feel better in the long run. Ugh! Who wants to do that?? So, I am thrilled to discover this Chicken Detox Soup! It is so flavorful, so amazing, and so easy to do something so good for your body! I find myself craving this! I hope you try it for yourself.
Chicken Detox Soup
Ingredients
- 2-1/2 pounds chicken breasts 3-4 breasts
- 1 large onion chopped
- 4-6 cloves garlic minced
- 1 tbsp Olive oil
- 3 4.5 oz cans diced green chilies
- 2 14.5 oz cans fire roasted crushed tomatoes
- 4-6 Cups Chicken bone broth
- 1 tbsp cumin
- 1 tsp crushed red pepper
- 1/2 tsp turmeric
- 2-1/2 cups sliced or shredded carrots
- 4 Cups shredded cabbage
- 4 cups small broccoli florets or frozen broccoli
- 2 avocados peeled and diced
- salt and pepper
Instructions
- Add olive oil, onions and garlic to a large pot over medium heat. Sauté for 5-6 minutes to soften
- Then add in chicken breasts, green chilies, tomatoes, broth, all spices, carrots and 1-1/2 tsp sea salt
- Bring to a boil, lower heat and simmer for 20-30 minutes until chicken is cooked through. Remove chicken and set aside
- Add cabbage and broccoli to the pot. Continue to simmer until broccoli is softened.
- Shred the chicken with 2 forks and stir back into soup
- Once broccoli is tender, taste, and add salt and pepper as needed. Feel free to add in any herbs you like. Oregano, parsley, basil, paprika, garlic salt are all great options
- Serve warm with a lot of diced avocado on top
