Chicken Detox Soup

Ingredients
  

  • 2-1/2 pounds chicken breasts 3-4 breasts
  • 1 large onion chopped
  • 4-6 cloves garlic minced
  • 1 tbsp Olive oil
  • 3 4.5 oz cans diced green chilies
  • 2 14.5 oz cans fire roasted crushed tomatoes
  • 4-6 Cups Chicken bone broth
  • 1 tbsp cumin
  • 1 tsp crushed red pepper
  • 1/2 tsp turmeric
  • 2-1/2 cups sliced or shredded carrots
  • 4 Cups shredded cabbage
  • 4 cups small broccoli florets or frozen broccoli
  • 2 avocados peeled and diced
  • salt and pepper

Instructions
 

  • Add olive oil, onions and garlic to a large pot over medium heat. Sauté for 5-6 minutes to soften
  • Then add in chicken breasts, green chilies, tomatoes, broth, all spices, carrots and 1-1/2 tsp sea salt
  • Bring to a boil, lower heat and simmer for 20-30 minutes until chicken is cooked through. Remove chicken and set aside
  • Add cabbage and broccoli to the pot. Continue to simmer until broccoli is softened.
  • Shred the chicken with 2 forks and stir back into soup
  • Once broccoli is tender, taste, and add salt and pepper as needed. Feel free to add in any herbs you like. Oregano, parsley, basil, paprika, garlic salt are all great options

  • Serve warm with a lot of diced avocado on top
