What are we making Monday? This week it is Olive Garden’s Zuppa Toscana Soup! What is better than Olive Garden’s soup. salad and breadsticks? It’s a pretty amazing combo really. However, as with most things, I like to tweak, modify, (make a little healthier) and create magic in my own kitchen. (Notice the side note options)
There is something so simple, so soothing, so comforting about this soup. I absolutely love it!!
Olive Gardens (Recreated) Zuppa Toscana Soup
Ingredients
- 1 pound Italian sausage or ground beef or turkey
- 1/2 pound cooked bacon
- 1 medium onion chopped
- 2 cloces garlic crushed, minced
- 29 ounces chicken broth
- 6 Cups Water
- 1 Cup heavy whipping cream I just use sour cream
- 2 large potaoes cubed
- 3 Cups Kale or spinach
Instructions
- Brown sausage and bacon, onion and garlic in large stockpot
- add in water, broth, and potatoes
- Heat on med-high until potatoes are tender
- Add in whipping cream (or sour cream) and Kale (or spinach)
- Reduce heat and simmer for 15-20 minutes
