What are we making Monday? Meatloaf!! This is not your everyday meatloaf. I created this recipe many years ago when I was looking for clean protein and veggies. I was having trouble eating raw vegetables, so I needed a way to incorporate them into a dish to be able to easily digest. I also needed to stay away from eggs, and breadcrumbs, (minimize gluten) and I don’t love using the premixed seasoning packs. So this was born! And OH MY GOODNESS is this delicious!
The first time I made it for my husband he was floored! Hands down the best meatloaf he has ever had! Super moist and flavorful. It is now requested by him and his hunting crew when they spend a week being men and doing what men do. I can’t think of a better meal for a few hungry hunters than a big chunk of meat, am I right?
This is also a great comforting meal for the family any day of the week. Paired with mashed potatoes, side salad, roasted veggies, the options are endless, as this pairs well with everything!!
Mama Robin’s Meatloaf Recipe
Ingredients
- 2 pounds ground beef (or turkey)
- 1 small onion, chopped optional
- 4-6 cloves garlic. minced optional
- 1 green bell pepper, chopped optional
- 4 large mushrooms, chopped fine
- 1/2 Cup ketchup or BBQ sauce
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp basil
- 1 tsp oregano
- 1 tsp parsley
Instructions
- Stir all ingredients together in big bowl. Dump into your meatloaf pan. Use a spoon to even out and smooth down top to make a "loaf"Top with extra lines of ketchup or BBQ sauce.Bake @350 for 60-75 minutes until internal temperature is 165 degrees
