Jalapeño Popper Quesadillas are what we are making Monday! I was so pleasantly surprised and blown away by these. The mix of flavors and the perfectly crisped tortilla (this does make all the difference) were absolutely amazing! I added chicken to ours to make a heartier dinner and it was exceptionally delicious. I would definitely eat these on repeat. Bonus points for being easy to put together! A great option for weeknights or when you just want something quick, but yet, out of this world on taste and flavor!
Jalapeño Popper Quesadillas
Ingredients
- 2 large Burrito size flour tortillas
- 4 strips bacon, cooked, or crumbled bacon
- 2 jalapeño peppers diced
- 4 oz cream cheese room temperature
- 1/2 cup mozzarella cheese shredded
- 1/2 cup Monterey, Colby, or cheddar cheese shredded
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 chicken breast, diced optional
Instructions
- mix cream cheese, shredded cheese, cooked bacon crumbles, jalapeños and seasonings in a bowl
- divide cream cheese mixture between 2 tortillas and fold in half
- If adding chicken, place chunks of chicken on top of filling.
- Place in skillet and brown tortilla at medium heat for 2-3 minutes on each side
- Cut and serve!
